Honey Mustard Glazed Ham

The ham does the heavy lifting on Christmas Eve and again in every sandwich afterwards. If you have bought one of our cooked hams, this is the twenty minutes that turns it into the centrepiece.

Ingredients

  • 1 cooked ham, about 2 to 3kg
  • 4 tbsp honey
  • 2 tbsp wholegrain mustard
  • 1 tbsp Dijon mustard
  • 50g soft brown sugar
  • Whole cloves, optional

Method

  1. Step 1

    Prepare the ham

    Take the ham out of the fridge an hour beforehand. Cut away the skin with a small sharp knife, leaving an even layer of fat behind. The fat is what carries the glaze.

  2. Step 2

    Score the fat

    Score the fat into diamonds, cutting into the fat but not the meat. Push a clove into the point of each diamond if you like.

  3. Step 3

    Mix the glaze

    Stir the honey, both mustards and the brown sugar together until smooth. It should be thick enough to sit on the ham rather than run off it.

  4. Step 4

    Glaze and roast

    Sit the ham on foil in a roasting tin. Brush over a third of the glaze. Roast at 190C, fan 170C, for 30 to 35 minutes, brushing on more glaze every ten minutes.

  5. Step 5

    Watch the last ten minutes

    The glaze goes from golden to burnt quickly. If it is darkening too fast, tent loosely with foil. Rest for fifteen minutes before carving.

Three things worth knowing

  • Line the tin with foil before you start. Burnt-on honey and sugar is a genuinely miserable job.
  • Serve warm on the day and cold thereafter. A glazed ham keeps well in the fridge for a week.
