Two birds, one standard: slow rearing, proper welfare, and preparation by hand on the farm where they were hatched.
Our bronzes are reared exclusively for Christmas. They live outdoors in the woodland at Charlesfort Estate, free to roam and forage day and night for up to seven months, more than twice the age of a standard supermarket bird. That slow growing is where the flavour comes from: a richer, fuller taste and a firmer texture that holds beautifully in the roasting tin.
After Christmas week begins, each bronze is dry-plucked by hand and hung in the traditional way, deepening the flavour further. It is the bird we would put on our own table, and the one our regulars book earliest every year.
The Charlesfort White is the classic Irish Christmas turkey: mild, tender and consistent. It is reared in airy, open barns here on the farm with room to move, natural light and the same feed and care as our bronzes. If your table prefers a gentler flavour, or you are feeding a crowd on a budget, the White is an honest, excellent bird.
Every turkey we sell is fresh, never frozen. Birds are prepared in our own farm butchery in the days before your delivery or collection date, weighed and labelled to your order. Because everything happens on one farm, we can tell you exactly how your bird was reared, fed and finished. If you visit the farm shop, we will happily show you.
